You are correct that Maker’s Mark spells it “whisky”. There are other great bourbons that spell it whiskey though. (Basil Hayden’s and Bookers are two of my favorites spelled “whiskey”)
It all depends on the heritage of the bourbon. whiskey is english-irish. whereas whisky is scottish. not a lot of difference other than the “e”, i stick to my “whiskys” though.

So Bourbon is just a subset that falls under the umbrella of the liquor known as Whisky
